Slow Cooker Moroccan Apricot Chicken

Ingredients

  • 500-800 g chicken pieces any pieces you like, my family prefer chicken breast so I usually use 2-3 large chicken breasts and cut them up into smaller pieces.
  • cup plain / all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1-2 Tablespoons olive oil
  • 1 Tablespoon butter
  • 2 Tablespoons Moroccan seasoning
  • 1 brown onion sliced
  • 2 cloves garlic finely chopped or minced
  • 1 405 ml can apricot nectar
  • 8-10 dried apricots

Instructions

  • Coat the chicken pieces in the flour combined with the salt and pepper.
  • Heat oil and butter in a large frying or saute pan.
  • Brown chicken pieces on all sides.
  • Once browned, transfer chicken to the slow cooker.
  • In the same pan over medium heat, add the Moroccan seasoning and stir for a few seconds until aromatic.
  • Then add onion and garlic and stir over heat to combine.
  • Once the onion has softened add the apricot nectar and bring it to the boil.
  • Carefully pour the sauce into the slow cooker over the chicken pieces.
  • Stir to combine.
  • Slow cook for 4-6 hours on high or 6-8 hours on low.
  • 1 hour before serving add the dried apricots and stir to combine.
  • Serve with mashed potatoes or rice and your choice of vegetables.
