Looking for a quick and easy cake to whip up for morning or afternoon tea? It doesn’t get any easier than this simple cinnamon cake recipe!
Known in our house as ‘Nana’s cinnamon cake’ (as it was commonly served to us at Nana’s house when we would visit), this cake is moist, delicious and so easy to make!
It doesn’t get much easier than a simple ‘dump and mix’ recipe using simple ingredients you most likely already have. Here’s what you’ll need to make this tasty cake:
‘Dump’ or add all of the ingredients (except for the butter) into the bowl of a stand mixer (or a large bowl if using hand beaters).
Melt your butter in a small, microwave safe, jug in the microwave (or on the stove top if you prefer), then pour the melted butter over the top of the rest of the ingredients.
Then simply set your mixer going for three minutes, using a spatula to scrape down the sides of the bowl occasionally.
Line a 20cm cake tin with cooking spray and baking paper and then pour your cake mixture in.
Pop it into the oven (preset at 160℃ fan forced) for around 35 minutes until cooked.
Cool on a cooling rack, then serve and enjoy! (you can ice it if you like – Nana used to ice it with lemon flavoured icing sprinkled with extra cinnamon, but my family prefers to eat it plain, un-iced).
Cinnamon Cake Recipe
Ingredients
- 1 cup Self Raising Flower
- 1 cup Caster Sugar
- 3 teaspoons Cinnamon
- 2 teaspoons Mixed Spice
- ½ cup Milk
- 1 teaspoon Vanilla
- 2 Eggs
- 85 g Butter melted
Instructions
- Add all ingredients (except butter) to a large mixing bowl or the bowl of a cake stand mixer.
- Melt butter and pour over the top of ingredients.
- Beat for 3 minutes.
- Pour into a prepared 20cm cake tin.
- Bake in a moderate oven (160℃ fan forced/180℃ conventional) for around 35 minutes until cooked.
If you like your cakes with icing you can add some lemon flavoured icing with a sprinkle of cinnamon, otherwise just enjoy the cake plain like our family do.
